This year's Salt Function and Flavor workshop will provide an in-depth look at sodium concerns based on the latest information and research available, with an added focus on baked goods. Learn how the consumer experiences sodium, about the function of salt, how to substitute salt without sacrificing flavor, and the latest techniques for reducing sodium in processed foods, restaurant cuisine, and baked goods. The curriculum has been designed for first-time workshop attendees as well as those wishing to build on last year’s workshop content. Pre-registration is required.
